Red romaine salad with walnut and eggs

For those lazy days when all you want to do is lie in bed and watch Netflix. Substitute popcorn with a healthy, crunchy salad instead.

Ingredients:

  • 6 large eggs

  • 1 head red romaine torn into pieces

  • 1 cup walnut halves toasted

  • Shallot vinaigrette

  • Salt

  • Pepper


Instructions:

  1. Put eggs in a medium saucepan and bring to a boil. After 2 minutes, turn off heat, cover and let sit for 6 minutes.

  2. Transfer to ice water bath.

  3. Drizzle lettuce and walnuts with 5 tablespoons vinaigrette and toss.

  4. Peel eggs and serve on top of salad.

  5. Season with salt and pepper.
